Turkey ... Dinde

J'ai fait une bonne affaire grâce au fait que la Migros du coin a spéculé sur le nombre d'Américains qui allaient acheter des dindes pour Thanksgiving. J'ai eu une bête de 3kg à moitié prix (remarque, ce n'est pas une bête à l'échelle américaine, leurs tabelles de cuisson commencent à 5kg!)

Le seul problème était que je devais la cuire rapidos, puisqu'elle passait la date et qu'elle ne rentrait pas dans le congélateur.

J'ai cherché sur internet est suis tombé sur un site qui explique comment rôtir une dinde sans que la poitrine soit tout déséchée, et sans s'empoisoner (http://www.howtocookathanksgivingturkey.com). La méthode avait l'air assez simple, et ça m'a réussi.
  • Voilà une traduction en kilos:
  • Sortir la dinde (préalablement décongelée) du frigo une heure avant de cuire
  • La laver à l'intérieur et l'extérieur
  • Préchauffer le four à 250C
  • Séparer délicatement la peau de la poitrine, en glissant la main par le trou du cou, sans la déchirer
  • Enduire toute la surface de la poitrine (en dessous de la peau) avec du beurre fondu
  • Ajouter aussi des herbes selon vos goûts
  • Refermer la peau
  • Mettre sel/poivre sur toute la bête pour ajouter du goût
  • Cuire à 250C pendant 20 minutes
  • Réduire à 120C sans ouvrir la porte
  • Cuire encore 45 minutes pour chaque kilo
  • Vérifier avec un thermomètre à viande que l'intérieur de la cuisse est à 82C et la poitrine 77C.
J'ai aussi fait une bonne soupe avec la carcasse!
I got a good bargain out of the fact that the local supermarket wildly overestimated the number of Americans who'd be buying Thanksgiving turkeys. I got a 3kg monster at half price.

The only problem was I had to cook it quickly, as it was almost past sell-by and wouldn't fit in the freezer.

So I went looking on the internet and found this site: http://www.howtocookathanksgivingturkey.com. The method described there has the advantage of being relatively simple, though apparently not guaranteed.

But it worked for me, the meat was juicy and delicious, and I made a load of soup out of the bones too!

Here is a metric version of the 'magic' method:
  • Get (completely defrosted) turkey out of fridge an hour in advance
  • Wash it in and out!
  • Preheat oven to 250C
  • Gently separate the skin from the breast (without removing it)
  • Spread melted butter inside this area, all over the breast.
  • Add herbs of your own choosing
  • Fold the skin back over the neck cavity
  • Salt/pepper to taste all over the outside
  • Cook at 250C for 20 minutes.
  • Reduce temperature to 120C (without opening the door)
  • Cook an additional 45 minutes for each kg
  • Check with a meat thermometer that the thigh is at 82C and breast at 77C
Just goes to show that one man's Thanksgiving is another man's Christmas!
